According to Nielsen IQ, fresh fruit sales in grocery stores have climbed nearly 11 percent and fresh vegetables 13 percent since 2019.
While only a tiny percentage of Americans are true vegans or vegetarians — in a 2018 Gallup poll, 5 percent said they were vegetarians — that’s not the public these new businesses and products are chasing.
